Sticky Date Pudding Cupcakes

Today I decided to try something different. Everyone does the plain old 'Red Velvet Cupcakes' these days. I wanted to take a classic dessert that everyone loves and make it into a cupcake that people can enjoy on their own and not have to share with anyone else.

I am making 'Sticky Date Pudding Cupcakes' with a rich, caramel sauce to drizzle on top and a small amount of my famous, soft, smooth, velvety cream cheese icing.

Everyone loves Sticky Date Pudding and why not make an individual portion size so that people can enjoy by themselves whenever they like. These cupcakes freeze well and then placed back into the oven for a few minutes and enjoyed on the spot.


Long gone are the days when something had to be baked and eaten on the same day. These can freeze well up to a month. The caramel sauce can be made 2-3 days in advance (I would make it the same day as baking the cupcakes as it is so hard to resist eating spoonfuls of the sauce).

Warm or room temperature, these cupcakes are so soft, moist and delicious I could eat them for days!
